Description
The Plantation Jamaica (2002 distillation) Vintage Edition spent its first 10 years aging in bourbon barrels under the tropical climate of Jamaica. It was then shipped to Ch?teau de Bonbonnet in France where it matured for an additional 3 years in 350-litre Pierre Ferrand Cognac casks to further refine its character. It was finally bottled in 2016 as part of Cognac Ferrand’s expanding collection of Vintage Plantation Rums. The distillation was carried out using a pot still following a fermentation process that included 5 days in the Plummer style 5 days in the Wedderburn style and an extended two-week high ester fermentation.
